Coco-Mango Smoothie from “Eating in Color” & Twitter Party {Win a Vitamix}

What is it? It’s Coco-Mango Smoothie made with fresh mango, lime juice, coconut butter, and turmeric, and, man, was it delicious!

Coco-Mango Smoothie

Serves 2

  • 1 large ripe mango, peeled, pitted, and diced
  • Finely grated zest and juice of 1 lime
  • 1/2 cup coconut butter
  • 1 teaspoon ground turmeric
  • 1 cup ice, plus more for serving

In a blender, combine all of the ingredients with 1 cup of water and blend until smooth. Pour into 2 glasses over additional ice, if desired, and serve.

This smoothie was also super easy to make, and I loved that the recipe only called for 5 ingredients. Just dice up a mango. (If you don’t know how, here’s a helpful tutorial, which explains how to cut a mango.)

And then add all of the ingredients to a blender and blend! Voilà! Coco-Mango smoothie in just minutes!

Eating in Color is all about encouraging you to eat more color in a fun, stress-free way. This book highlights the entire color spectrum and inspires you to add fruits, veggies and grains to your diet by adding more oranges, reds, blues, etc. to your plate. It’s basically an easy to way to eat better without having to overthink or count calories or grams of anything. Just by replacing processed food with more fresh fruits, vegetables and whole grains, you will automatically cut calories and saturated fat while boosting your intake of fiber and antioxidants. Eating in Color is not a diet book, but you’ll learn a lot about eating healthier and boosting flavor in your meals. It includes recipes for dessert, burgers, and cocktails because a healthy lifestyle should also be fun!

I especially enjoyed reading the “Ingredient Profiles” in the book that highlight various seasonal produce, grains and seeds and provide information on nutritional benefits and how to choose, store and use all those delicious foods.

Mangos are delicious, and they’re a great way to add a delicious pop of orange and tropical flavor to your meals and snacks. I frequently incorporate frozen mango chunks into my smoothies (oh, so many smoothies – more on that later). Frozen mango also makes great fruit soft serve. You know the Banana Soft Serve that the blog world went crazy about a few years ago? Frozen mango works the same way. Trust me, try it! You will not be disappointed!
