What the heck have I been doing all day?!? I’ve barely accomplished anything from my To Do list. 😕 I guess that’s what happens when you sleep the morning away and then screw around on the internet for a few hours. Blah. I am totally lacking focus today.
I “worked” until about 12:30 before breaking for lunch. For some reason, my breakfast didn’t hold me over like it normally does. I wanted to eat lunch earlier, but I ended up getting distracted (by Twitter, online shopping, etc.) and worked until my stomach started to really grumble.
Today’s lunch was a big salad with lots of veggies, KooLoos, and balsamic vinegar drizzled on top.
In the mix: romaine, tomatoes, cucumbers, mushrooms, celery, red bell peppers, and carrots.
On the side, I had a toasted Sandwich Thin with melted cheese.
After lunch, I had a serious sweet tooth! It must be (Cookie) Friday! 😉
First, I had a Blueberry Coconut Bar.
Then, I made some Almond Joy “Ice Cream.” This time, however, I changed the recipe:
- 1 frozen banana
- 2 tbsp coconut flour
- Splash of vanilla soy milk
- Shredded coconut
This batch was REALLY good! It was so much better than the original recipe! Holy YUM! I actually might like this version of “ice cream” more than the real deal.
Even though I didn’t get a lot done today, I managed to write most of my Health post instead of saving it for Sunday night like I usually do– so, that’s definitely a win for me! 😀
Murphy and I are off to have puppy playtime with Bella and Grady while Marie and I enjoy Happy Hour. Yay for Friday!
