Have you guys seen Girls on HBO? It’s a series about a group of twenty-something friends living in New York City. People have referred to it as a younger version of Sex and the City, which I can sort of see, but I actually liked the characters in that show. The characters in Girls are obnoxious (I’d never want to be friends with any of them in real life), but I can’t stop watching it. I stumbled upon the show last week, and I’ve since plowed through every single episode. Ok, it is hysterically awkward, which I can totally relate to, but I have no idea why I find it so addictive?!
Mal planned Chicken Tacos with Avocado and Grapefruit Salad for dinner last night, but we didn’t have any taco shells, so I ended up mixing all of the ingredients together (minus the green chilies and scallions) and adding them to a spinach salad.
I topped my salad with a big scoop of salsa. The combination of ingredients was so delicious””who knew grapefruit, black beans, and chicken would go together so well?
After dinner, in honor of National Peanut Butter Cookie Day, which is today, I whipped up a batch of my favorite Peanut Butter Cookies.
I have no idea where I found this cookie recipe, but it’s a go-to in our house””mostly because it’s so easy to make and only requires three ingredients. I added chocolate pieces to this batch!
3-Ingredient Peanut Butter Cookies
Ingredients: 1 cup peanut butter + 1 cup of sugar + 1 egg
Directions: Preheat oven to 350 degrees F. Combine ingredients and divide dough (using a tablespoon) onto a prepared cookie sheet. Flatten with a fork, if desired. Bake for 8-10 minutes.
I ate two three four Peanut Butter Cookies after dinner. Oh my goodness, they were so delicious!
