As you might remember, we are huge fans of American Chop Suey in our house. We probably make it every other week or so. It’s easy to make and incredibly delicious, so it’s definitely a go-to meal for our family.
I recently had the opportunity to partner with Imagine Foods to develop a recipe using one of their creamy soups. I chose Imagine Organic Creamy Tomato Soup to incorporate into a spicy version of our beloved American Chop Suey. This version is made with ground chorizo, canned tomatoes and green chilies, elbow pasta, and a little bit of hot sauce.
- 10 ounces Imagine Organic Creamy Tomato Soup
- 2.25 cups dry elbow pasta
- 1 pound ground chorizo
- 10 ounces canned tomatoes & diced green chilies, drained (I used Ro-Tel)
- 1 tbsp hot sauce (more if you can handle the heat!)
Cook pasta as directed. Meanwhile, heat chorizo in a skillet on the stove top. Use a spatula or fork to break it up as you cook it.
When the pasta is finished cooking, drain the water and then add it to a large mixing bowl along with the Imagine Organic Creamy Tomato Soup, canned tomatoes & diced green chilies, chorizo, and hot sauce.
Mix it all together and serve immediately.
Just like traditional American Chop Suey, this recipe is super easy to make, really filling, and makes some seriously tasty leftovers. It’s most definitely a winning recipe, and I have a good feeling it will become another go-to meal in our house!
Serving suggestion: Add a sprinkle of grated Parmesan on top. So good.
