Good morning! Happy FRIDAY! I started my morning with an especially delicious breakfast.
Last night, a reader asked me if coconut flour could be substituted for almond flour in my Paleo Morning Glory Muffins. I wasn’t 100% sure since I’ve only made them once, so I whipped up a batch with coconut flour. The muffins turned out okay””definitely edible””but I like the almond flour version a lot better.
The coconut Morning Glory muffins were pretty crumbly, so I broke one up and mixed it with banana slices and sunflower butter for breakfast this morning. It was a really delicious combo!
I also drank a glass of decaf Vanilla Rooibos-Chai tea with almond milk.
I went to Whole Foods the other day in search of Teeccino and found it, but, sadly, I discovered it’s made with barley, which is discouraged on the SCD, Paleo, and GAPS diet. BUMMER! I thought this stuff was going to be my go-to coffee alternative.

So, I headed to the tea aisle and had some fun checking out the different options. I’m still avoiding caffeine, so I went with a Decaf Chai and Vanilla Rooibos, which I brewed together when I made my iced tea. LOVE the flavor combination! Maybe I’ll become a tea gal after all?
I almost bought a PUGG teapot solely because of its name, but I decided to save my money.
